Jen’s Garlicky Shrimp Stir Fry

I was craving a garlicky stir fry tonight. I found a pound of shrimp in the freezer, and broccoli, carrots, peppers, and snap peas in the veggie drawer. Perfect! And it’s great for the 800 gram a day produce challenge! There’s 443 grams of produce on that plate. WooHoo! Hope you love it, too!

My favorite ladies’ fitness and health page is doing a super fun challenge for the month of September. 800 grams of produce a day. This one is especially exciting to me because I love to see produce do a hostile takeover of the plate. I have an energy addiction! LOL!

Jen’s Grain-Free Chicken and Dumplings

I love chicken and dumplings, but wanted to skip the flour. Birchbenders pancake mix is just cassava flour (root vegetable you’ll find in Mexican applications), coconut flour, and almond flour. I played around with that and it worked nicely. And between the mix and rotisserie chicken, it fits my lazy summertime kitchen mood perfectly.

Jen’s Broccoli Soup in the Instant Pot

Broccoli Soup. This is my favorite thing to make in the Instant Pot. The original recipe was from The Healthy Meal Prep Instant Pot cookbook. I loved the concept, but it was unseasoned and light on produce. My version tastes a lot like that mall restaurant we all used to know and love, Olga’s. If you know that name, you were probably a teenager in the 80s, too! LOL!

Lavash_CASE_OP.inddI’d eaten store-bought lavash before, but I’d never been to an Armenian restaurant, so I really had no idea what to expect with Lavash. I can tell you now just what a travesty that was! Hauntingly delicious kebabs of fragrantly spiced meat and vegetables in homemade lavash flash baked on my grill. This was the most amazing sandwich. While lavash is served with an awful lot of dishes in the book, the book has a huge variety of Armenian recipes. And they are delicious! And many of the dishes are good for you! I’ll talk about the rest of the book in a minute, but first I want to share the recipe for that glorious grilled bread with you. It has no resemblance to the stuff at the grocery store. None. Zero. Stephen King’s IT. Veggiewise the Clown. Terrifying produce.

I’m getting lots of emails asking for details of how I made Veggiewise the Clown. Because IT part 2 just came out! I can’t even wait to see it! My Veggiewise is the old-school Tim Curry version.
