Jen’s Garlicky Shrimp Stir Fry

I was craving a garlicky stir fry tonight. I found a pound of shrimp in the freezer, and broccoli, carrots, peppers, and snap peas in the veggie drawer. Perfect! And it’s great for the 800 gram a day produce challenge! There’s 443 grams of produce on that plate. WooHoo! Hope you love it, too!

Jen’s Pear and Cardamom Grain-Free Pancakes

We all love pancakes, but I like to keep grains to a minimum. I’m in love with Birch Bender’s pancake mix. It’s just almond flour, cassava (a root vegetable) flour, and coconut flour. No sugar. Today I made pear and cardamom cakes with pear syrup. Nothing but fruit. No sugar added. Boom! My kiddo said these tasted like Christmas, but I think that’s because I make lovely Scandinavian cardamom pastries every year.

Jen’s Grain-Free Apricot and Pistachio Pancakes

When we lived in New York, one of our favorite anniversary spots was Dawat, Madhur Jaffrey’s place on 58th. So good! I don’t know if it’s still on the menu, but she used to make a naan bread filled with apricots and pistachios that was to die for. That was the inspiration for my pancakes. Hope you love them!

Jen’s Lazy Grain-Free Banana Walnut Pancakes with Coconut Maple Vanilla Sauce

I love cooking all day and night, but in the morning? Nope. I love super easy, lots of flavor, and some nice fuel for the day. If that sounds like you, I think you’ll love these!

Julia Turshen’s Scrambled Eggs with Cilantro + Coconut Chutney recipe and Cookbook review: Now & Again

Julia Turshen’s new book, Now & Again, is absolutely amazing. I love everything about it. In one of her recipes she instructs, “Arrange the mango slices artfully-but not too preciously-on a serving platter.” That really captures the feel of the book. Everything has a breezy elegance to it and nothing is fussy. The recipes are global, and I adore that many of them are off the beaten path. I love being exposed to new things. The book is organized by season, and then menus for all different sorts of get-togethers. The recipes are casual, beautiful, interesting, nourishing, and delicious, and nothing’s difficult. She generally has you serving dishes right in what they’re made in. I’ve had the book in my hands for 3 days and I’ve made 4 meals from it already. <Minus the desserts. I already run 5 miles a day and don’t care to increase that – lol!> It’s a hard book to put down.

I don’t have a copy of her ridiculously popular book, Small Victories <I know!>, so I can’t make a comparison there. This has a gingham print detail running along the spine just like that one, so I’m betting it’s in the same vein. Feed the Resistance is a tiny book of hers focusing on food and activism, and that one’s terrific. And she worked with Gwyneth Paltrow on It’s All Good, another yummy, feel-good title.

My full review of the book with my pics and thoughts of all the dishes we tried so far, is at the bottom. But first I wanted to share with you her recipe for Scrambled Eggs with Cilantro + Coconut Chutney from her Sunday Morning Bangladeshi Breakfast menu. Jen’s Pina Colada Coconut Pancakes. Healthy, Deeeeelicious, and Vegetarian.

Oh brunch! How I love you! A few years ago, we spent a few days in Denver on the way to Yellowstone. What a cool city! If you go, the art museum there is absolutely amazing. Definitely in my top 5 art museums ever. There’s a breakfast place there called Snooze. http://snoozeeatery.com/ You have to wait to get in, but it’s oh so worth it! Mmmm. Sweet potato buttermilk pancakes topped with homemade caramel, candied pecans and ginger butter. Buttermilk pancakes with caramelized pineapple chunks, housemade vanilla crème anglaise and cinnamon butter. I LOVE those pineapple upside down pancakes!

I started playing with that idea in my kitchen trying to bring a little vacation home. I added dollops of crushed pineapple and a sprinkle of sugar to each pancake before flipping it, and it caramelized so nicely. Delish. Then it hit me! Coconut flour is healthier than regular flour and it’s banging the same tropical vibe. And coconut milk makes everything more decadent even though it’s good for you. Oh baby! The wheels were spinnin’! Coconut flour and almond flour pancakes love to stick to the pan, so you need to make them smaller. And that would make adding a little dollup and sprinkle to each fussy. Hmmm. In Maricel Presilla’s Gran Cocina Latina: The Food of Latin America, she makes the most cravable caramelized pineapple, avocado, and red onion salad. (She has a killer restaurant in Hoboken, New Jersey, right through the Lincoln Tunnel from Manhattan, called Cucharamama, and you must go if you’re ever near there. She’s a culinary genius and food history nerd extraordinaire!) The pineapple is caramelized under the broiler, just getting turned once. Perfect technique for this!

They’re healthier this way, but they’re yummier, too! It tastes like an island vacation. It’s a little plate of sunshine. Delicious, delicious sunshine.

It’s a weekend, so let’s set the kitchen mood! Put on a Marley’s Legend or turn your XM to 42 for the reggae channel. Prefer a little Cuban music? Albita’s No Se Parece A Nada wonderful. Or a little Jazz or Blues is always brunch appropriate. Or crank Metallica’s Kill ‘Em All (Remastered). You do you. Open the windows. But brunch is really at its yummiest on the porch. Truth.

If you love them, please come and find me again! :D Or you can hit that big, shiny follow button and you’ll get an email once or twice a week when I post.

Jen’s Jalapeño Buttermilk Ranch Salad 3 Ways. Carnivore, Pescatarian, Vegetarian? I got you!

I love a big bowl of salad filled with a rainbow of colors, and all kinds of contrasting flavors and textures. Especially when it has the sort of dressing that you’d happily dip chips into. But you’re not. You’re producing hard. Produce-ing. As in produce. Vegetables. Not like you’re having a productive day. Anywho. Here’s a delicious bowl of the good stuff. I’ve given three different protein options so carnivores, pescatarians, and vegetarians can all have a big happy bowl of yum. Happy produce-ing, peeps! 😀 Edit: 9/25/2020. I just weighed this out for the 800 gram produce challenge, and it’s 435 grams per plate. WooHoo!
