Jen’s Buffalo Joes – as in the meat, not the sauce ;)

Oh January, how I love you! After 5 fast-paced months, good old sleepy, relaxing January shows up, and I have very little to do. I love to really take advantage of it by getting double workouts in every day (well, 5 days a week), and go freezer diving for the dinner centerpieces. What do I find in that freezer? A lot of healthier cuts of meat that my well-intentioned self buys if I go to Costco hungry, and then they sit in the freezer waiting to become something.

Jen’s Smoky, Cheesy, Bacon & Chicken over Spaghetti Squash with Lots of Complementary Vegetables. Mmmmm.

It’s Martin Luther King Jr. Day, National Hug Day, and my birthday! And yesterday was National Cheese Lover’s Day. Time for a combination of two wonderful things: cheese and smokiness. I fell in love with a pasta dish from a recipe card that came with a Pampered Chef pan years ago, and have adapted it to my taste over the years. It’s pretty distant from the original, but that was the inspiration. Glorious inspiration. I hope you love it!

Bourbon Caramel Crème Brûlée recipe and cookbook review: The Bourbon Country Cookbook

I always make crème brûlée for Christmas and Valentine’s Day dessert. I’d been playing in a bourbon cookbook, The Bourbon Country Cookbook, and the crème brûlée in it sounded fantastic, so we gave it a try. Oh my gosh! Bourbon Caramel Crème Brûlée is hands-down the best crème brûlée I’ve ever made. There’s just a smidge of bourbon in it, and it doesn’t overpower it at all. It enhances it beautifully! I prefer the laziness of sous vide crème brûlée, but the flavor on this one is a knockout!

Are you a total meat lover? Hardcore Carnivore is an absolutely outstanding celebration of all things meat. Jess Pryles has a great BBQ reputation, but this book is not isolated to, nor emphasizes, BBQ. She approaches each dish individually, and cooks it by whichever method she prefers for that recipe – frying, roasting, baking, grilling, or smoking. The bulk of the book is meat dishes, just as you’d expect, and those are amazing, but don’t underestimate the supporting side dishes she’s got at the end. We loved those, too. This is a delicious book! I’m having trouble putting it down. Continue reading “Patty Melt Pretzel Buns recipe and cookbook review: Hardcore Carnivore by Jess Pryles”

A huge thanks to Sterling Epicure for letting me share it with you! I’ll tell you all about the rest of the book later, but first, that bread!
