Jen’s Chicken Puttanesca

Rachael Ray made Pasta Puttanesca on her show about 20 years ago. I’m sure she’s done it since, but that was the first time I’d heard of the dish. I was at our weekly playgroup. The babies were playing on the floor together, and the moms were chatting and half-watching as Rachael explained, “The ladies of the night used to put Pasta Puttanesca in the windows to entice customers. The dish is named for them. No disrespect to the ladies.” Rachael looked down, grinning in appreciation of her little joke, and all the moms burst out laughing. We all loved the dish! My version has chicken rather than pasta, and a little more complimentary produce.

Jen’s Southwestern Crustless Quiche

It’s my shopping day, so I popped into the fridge to see what veggies I needed to use up. I found 4 ears of grilled corn and ½ a pound of baby spinach. Awesome! A Southwestern crustless quiche, it is!

Jen’s Grain-Free Apricot and Pistachio Pancakes

When we lived in New York, one of our favorite anniversary spots was Dawat, Madhur Jaffrey’s place on 58th. So good! I don’t know if it’s still on the menu, but she used to make a naan bread filled with apricots and pistachios that was to die for. That was the inspiration for my pancakes. Hope you love them!

Jen’s Chicken 42

There used to be a sandwich shop in Ridgewood, New Jersey, and my favorite sandwich was the #42. Salami, roasted red pepper, provolone, and aioli. So good. That was the inspiration for this recipe. I hope you love it!

Jen’s Broccoli Salad

Everyone knows and loves broccoli salad, but there’s traditionally 2 cups of mayo in this much salad along with some sugar. That’s yummy, but we can do so much better than that! This has less than 1/6th of the usual added fat, and some lovely fresh juice. Better for you and more flavor. Boom! Hope you love it!

Jen’s Grilled Grain-Free Lamb Meatballs with Eggplant and Tomatoes

I love lamb. I was in a meatball mood, but wanted to keep dinner grain-free. Almond flour worked beautifully with both the texture and flavor. I hope you love it! If you’re strict Whole30 or Paleo, leave out the feta.

Jen’s Grilled Garlicky Herb Pork Tenderloin with Fennel and Orange Salad

I’m so excited! I won a pair of skull food leggings from my favorite activewear company, Constantly Varied Gear, for healthy recipe contributions! I love these things! Perfect for CrossFit, chillaxing, and they’ll be my Animal Kingdom outfit the next time we go for a Dole Whip. Disney ready!

Pork tenderloin is a super lean cut that grills really fast. This tastes and smells wonderful. If you don’t have a grill, don’t let that stop you! Roast it at 425 degrees F to til the internal temp is 145. I’ve roasted it in the oven for a holiday dinner when I was entertaining before. It’s always a winner and silly easy! Hope you love it!

Jen’s Steak and Eggs with an Herb Sauce and Tomatoes

My herb sauce is similar to chimichurri, but I use about ¼ of the oil. I like to keep it about the fresh herbs. Hope you love it!

Jen’s Curried Tofu with Peas and Cashews over Cauliflower Rice

Tofu. When my husband and I were first married, we ate tons of beans, tofu, eggs, and produce to keep the bills as low as we could. Gotta save for that home! We’re fine now, but so many of those dishes have stayed in the rotation because they also delicious and healthy. Here’s a tofu dish that everyone adores. Hope you love it, too!
