I get so bummed out for a second when summer ends, then I start thinking about fire pits, leggings, sweaters, apple and pumpkin and I get so excited for fall! I was in the mood for pumpkin pancakes. Jen’s Roasted Tomatoes over Roasted Garlic Tzatziki

I love the changes of the seasons. Summer’s flipping wonderful, but fall’s here and I’m leaning into it hard with some cozy weather favorites. Does everyone roast garlic? It changes the flavor completely, with the sharpness giving way to a deep soulful sweetness. Oh baby! I roast a bunch at once, since I’ve already got the oven on. So good. My idea of meal prepping is creating a lot of awesome ingredients that I can throw into a variety of things throughout the week and make them better.

Jen’s Pear and Cardamom Grain-Free Pancakes

We all love pancakes, but I like to keep grains to a minimum. I’m in love with Birch Bender’s pancake mix. It’s just almond flour, cassava (a root vegetable) flour, and coconut flour. No sugar. Today I made pear and cardamom cakes with pear syrup. Nothing but fruit. No sugar added. Boom! My kiddo said these tasted like Christmas, but I think that’s because I make lovely Scandinavian cardamom pastries every year.

I love smoking meat. It’s my favorite meal-prepping so that I can whip out delicious summertime-easy dishes. I make a lot and vacuum seal and freeze little baggies of it. No one’s ever been sad to find BBQ in the freezer!

Jen’s Grilled Garlicky Herb Pork Tenderloin with Fennel and Orange Salad

I’m so excited! I won a pair of skull food leggings from my favorite activewear company, Constantly Varied Gear, for healthy recipe contributions! I love these things! Perfect for CrossFit, chillaxing, and they’ll be my Animal Kingdom outfit the next time we go for a Dole Whip. Disney ready!

Pork tenderloin is a super lean cut that grills really fast. This tastes and smells wonderful. If you don’t have a grill, don’t let that stop you! Roast it at 425 degrees F to til the internal temp is 145. I’ve roasted it in the oven for a holiday dinner when I was entertaining before. It’s always a winner and silly easy! Hope you love it!

Shin splints suck and I love CrossFit!

Shin splints! I was running 9 1/2 miles a day and loving it! Then shin splints. Shin splints are the worst. I needed to deal with them so they didn’t become a stress reaction or stress fracture. I’m on a lady fitness site, and asked what people did to heal them. Foam rolling, deep squats to deal with a muscle imbalance, stretching, and compression socks. To my surprise, icing was really controversial and people felt passionate about their positions.

Okay, I ordered compression socks, foam rollers, and started going after deep squats and stretches like nobody’s business. I’d worked for a few years on that running endurance, and didn’t want to give that up. I decided to give CrossFit a try. Holy workout, Batman! You’re a sweaty mess and done in less than an hour. It’s totally scalable to every fitness level, so it’s custom order-type challenging, and a novice and a gymrat can work out side-by-side. Perfect. To my shock, my husband quit with his nautilus-type gym and started joining me. And then the kids showed up. Too neat.
