Instant Pot Miracle is a super neat Instant Pot book with a huge range of Instant Pot recipes. It’s pretty much one stop shopping. We loved everything we tried. Note that we found the salt measures really light, and generally doubled the salt. You can tailor the sauciness level afterwards by pulling out the meat or whatever and reduce the sauce to your perfect level using the saute button.

We loved the Mojo-Marinated Cuban-Style Pork, so I wanted to share that recipe with you. It marinates for a day before you make it, so be sure to budget the time. The flavors are spot on. Delicious! I served it with rice and sweet plantains.

I love smoking meat. It’s my favorite meal-prepping so that I can whip out delicious summertime-easy dishes. I make a lot and vacuum seal and freeze little baggies of it. No one’s ever been sad to find BBQ in the freezer!

Jen’s Hot Mess

We have a killer BBQ place in Dallas called Pecan Lodge. It’s the number two place in the state after Franklin’s down in Austin, but man is it close! Pecan Lodge is famous for a dish called The Hot Mess. Jumbo sea salt-crusted sweet potato, South Texas barbacoa (shredded brisket with southwestern seasoning), chipotle cream, cheese, butter & green onions. I like to do an at home version. Hope you love it!

Jen’s Cuban Stacks with Melon

Garlic and Herb Pork Tenderloin is one of my favorite back-pocket recipes. It only takes a few minutes to get it into the oven or grill, and then it cooks really quickly. It’s fabulous for stress-free entertaining or just a regular Monday. It’s really lean meat, lickably delicious, super fragrant, and couldn’t be easier. I got it into the oven post-workout, and let the oven do the work while I showered. Lunch was ready when I was! I made two of them. We had the first for lunch with garlic and dill roasted carrots, and saved the other for lunch the next day. I’ll show you what I did with it!

Jen’s Grilled Garlicky Herb Pork Tenderloin with Fennel and Orange Salad

Pork tenderloin is a super lean cut that grills really fast. This tastes and smells wonderful. If you don’t have a grill, don’t let that stop you! Roast it at 425 degrees F to til the internal temp is 145. I’ve roasted it in the oven for a holiday dinner when I was entertaining before. It’s always a winner and silly easy! Hope you love it!

Paleo Grilling is a cool paleo book. It’s not strictly grilling. Some dishes are completely grilled. Others are grilled as part of the process. Some are barbecued. And then there are the supporting characters that don’t see the grill. But it’s mostly grilling. The range is neat. For beginners, there’s an opportunity to learn the nuances of different steaks. He breaks out several of them separately with minimalist recipes so you can really get a feel for different cuts. I skipped those and went for the more complex dishes.

Fireball Whiskey Meatballs recipe and Cookbook Review: The Complete Electric Smoker Cookbook by Bill West

Fall is the perfect smoking weather.  The Complete Electric Smoker Cookbook is great for when you’d rather be out throwing a frisbee or bonding with your lawn chair in the sunshine than playing in the kitchen. It’s an easy, yummy book that will get you out in that yard. It’s called an electric smoker cookbook, but the recipes work perfectly in my kamado-style grill with a heat deflector plate, too.
