Jen’s Smoked BBQ Pulled Pork Salad

I’m celebrating over here! I won a darling cropped hoodie from my favorite CrossFit and activewear company, Constantly Varied Gear, for healthy recipe contributions. Perfect match. I can’t shut up about food, and they reward one of my obsessions with the other! 😀

I love smoking meat. It’s my favorite meal-prepping so that I can whip out delicious summertime-easy dishes. I make a lot and vacuum seal and freeze little baggies of it. No one’s ever been sad to find BBQ in the freezer!

Jen’s Smoked BBQ Pulled Pork Salad

Apple cider vinaigrette
You have two options for the vinaigrette. Either reduce apple cider by 3/4 or use a product called boiled cider. It’s delicious stuff and subs in beautifully when you don’t have the time to concentrate your apple cider into a gorgeously flavored syrup or when it’s hard to get a hold of. I’m going the apple cider reduction route this time.

Whisk together:
1 cup apple cider, simmered away until there’s 2 Tablespoons left – or 2 Tablespoons boiled cider
1 Tablespoon apple cider vinegar
3 Tablespoons olive oil
a nice pinch of salt and pepper

1/2 pound spring greens
Toss and distribute among 4 plates.

About 1/4 pound smoked BBQ pulled pork per person
1/2 honey crisp apple per person
Extra sharp cheddar
Pecans – plain, or lightly glazed – dealer’s choice

My favorite cast iron skillet is a 12″ Lodge dual handle pan. Why, the long handles are too heavy to hold with a single hand when they’re loaded up. Since you’re using two hands anyway, you might as well get the ones that take up less space and stack so much better!

My favorite knife. It’s a 7″ full tang Santoku. Full tang just means that the blade runs the full length of the knife. The blade and handle aren’t two separate components, so there’s no breaking point. I chose the Ikon handle design, which is wonderfully ergonomic. I have spent hours on a produce sculpture before and my hand was just as comfy at the end. It’s worth the pennies.

I get asked about my spice wall all the time. The magnetic tins on the wall are great for any spices or salt-free blends. Salt corrodes the tins, so anything with salt is in a glass jar on the counter underneath.

      1. It’s fine so far. I am in that stage where I am basically packed and wearing the same 3 sundresses over and over again lol (don’t worry I do wash them!) and basically eating food that other people have cooked for me because all of my cooking utensils and dishes are packed away. I’m dying to cook something for myself. 😁
