If you’ve been following my blog for awhile, you know that I love everything Milk Street does. Always phenomenal. If you’re already a Milk Street fan, you are going to love Milk Street Tuesday Nights Mediterranean. If you’re new to Milk Street, you’re in for a treat. They are absolute minimalists on everything but flavor. They’ll get you from the counter to the table in the easiest way possible. And they’re really strong flavorists.

I posted their recipe for Spaghetti with Lemon Pesto last week. If you missed that, you have to go back and make it! And you can see my full review of the book there. I wanted to share one more dish from this fabulous book with you. Sumac-Spiced Chicken Cutlets with Tomato-Onion Salad. Oh gosh. Are these ever fantastic. Don’t laugh, but if you’ve ever really enjoyed the pucker of a Sour Patch Kid, and you haven’t tried sumac, you’re missing out. The flavor of this dish is really unique and wonderful.

One post just isn’t going to do it! The Best Damn Paleo Brownies. I am embarrassed to say that after flipping through the book flagging recipes to try, I stumbled on this little gem, and made it first. LOL! Totally worth it! Because there’s no flour, there’s nothing dulling the flavor of the chocolate. These are intensely chocolately. The flavor and texture are terrific. These are my new favorite brownies! These are not just my favorite paleo brownies, they are my favorite brownies!

Mole Chicken recipe and cookbook review: The Whole Smiths Real Food Every Day

Mole chicken. Did you just respond, “Yes, please!”? Mmmmm. Mole chicken is *usually* a really time consuming dish. It’s the kind of thing that makes most cooks just keep flipping through the book to something easier. This is about 1 1/2 hours start to finish, and an hour of that is the Instant Pot doing the work. This has great flavor and is comparatively very easy. Let’s do this!

The Whole Smiths Real Food Every Day. I love love love this book! Everything’s delicious, easy, and nutritious. Perfect! I’ll tell you all about the rest of the book after the recipe. Please note ~ I think the author must be using Diamond Crystal Kosher salt because the numbers are at the high end. I’m using plain old salt, so I cut the salt to 2/3 in everything which worked perfectly. Thought I’d share in case you use table salt, too.

Jen’s Grain-Free Chicken and Dumplings

I love chicken and dumplings, but wanted to skip the flour. Birchbenders pancake mix is just cassava flour (root vegetable you’ll find in Mexican applications), coconut flour, and almond flour. I played around with that and it worked nicely. And between the mix and rotisserie chicken, it fits my lazy summertime kitchen mood perfectly.

Jen’s Cuban Stacks with Melon

Garlic and Herb Pork Tenderloin is one of my favorite back-pocket recipes. It only takes a few minutes to get it into the oven or grill, and then it cooks really quickly. It’s fabulous for stress-free entertaining or just a regular Monday. It’s really lean meat, lickably delicious, super fragrant, and couldn’t be easier. I got it into the oven post-workout, and let the oven do the work while I showered. Lunch was ready when I was! I made two of them. We had the first for lunch with garlic and dill roasted carrots, and saved the other for lunch the next day. I’ll show you what I did with it!

Jen’s Eggs in Purgatory

Eggs in Purgatory. I was first introduced to this dish watching Nigella Lawson. She talked about working as cleaning staff in a hotel in Italy to fund her travels. She waxed on about the sunshine and the views, then in classic Nigella style, switched gears from this idyllic imagery to talking about the best hangover breakfast dish with a smile. <snort> That woman has made me cough on more coffee! It is an amazing, effortless dish, and I hope you love my take on it.

Jen’s Mother and Child Reunion

My favorite brunch place in Ft. Worth is Bird Cafe. *Amazing* food and it has a bit of a New Orleans feel. If you’re ever in town, it’s a must-do! They have a dish called “The Mother and Child Reunion”. <I know!> Sick joke but amazing dish. Fried chicken and a poached egg over chili cheese grits with a spoonful of bacon gravy. This is my healthy spin on that.

Jen’s Poblano, Potato, and Mushroom Breakfast Tacos

Delicious, easy, filling, hand-held, happiness-inducing little pockets of joy. I adore breakfast tacos. They actually freeze pretty well, so you can skip the avocado, fold them up burrito-style, pop them in a vacuum sealed bag, and take them camping, just reheating in a little skillet over the fire. Skip the bacon if you want a vegetarian version. Hope you love them!
