Jen’s Grain-Free Chicken and Dumplings

I love chicken and dumplings, but wanted to skip the flour. Birchbenders pancake mix is just cassava flour (root vegetable you’ll find in Mexican applications), coconut flour, and almond flour. I played around with that and it worked nicely. And between the mix and rotisserie chicken, it fits my lazy summertime kitchen mood perfectly.

9781452169781They had me at the title with this one! I fell deeply in love with O’Connor’s work in a course back in college, and went on to read the whole collection. A Good Meal is Hard to Find: Storied Recipes from the Deep South is rich and storied, too. If you love the tales behind dishes, you’re going to love it. The illustrations are charming! And that’s just the frosting. The dishes are amazing!

I’ll tell you all about the dishes we tried in a minute, but first I wanted to share with you the recipe for THE SUZY B’S SPINACH AND MUSHROOM FRITO PIE. We love Frito Pie and had never heard of a vegetarian version before. It is absolutely amazing. To my shock, I strongly prefer it to the original one. It’s like a cheesy mushroom and spinach dip had a baby with frito pie. Yeah. Go make it now. I hope you love it, too!

51jjUk5MuUL._SX436_BO1,204,203,200_Cooking with Deb Perelman’s book, Smitten Kitchen Every Day: Triumphant and Unfussy New Favorites, is like having a funny friend hanging out in the kitchen with you. The food is terrific and just as unfussy as the title promises. I just made her Chocolate Pecan (and bourbon!) Slab Pie and it’s delicious! A huge thanks to Knopf for giving me permission to share the recipe so that you can taste the book! And just in time for Thanksgiving!
