Jen’s Grain-Free Chicken and Dumplings

I love chicken and dumplings, but wanted to skip the flour. Birchbenders pancake mix is just cassava flour (root vegetable you’ll find in Mexican applications), coconut flour, and almond flour. I played around with that and it worked nicely. And between the mix and rotisserie chicken, it fits my lazy summertime kitchen mood perfectly.

Jen’s Grain-Free Chicken and Dumplings

¾ pound cooked chicken, cubed (about 2 ½ cups)
1 pound frozen mixed vegetables
6 cloves garlic
, minced
1 can cream of chicken soup
½ cup milk

1 Tablespoon cheap dry white wine – optional (as long as you’d drink it, that’s the one. Just don’t use a sweet one. That would be gross here.)
½ teaspoon salt
½ teaspoon pepper

Pop it all in a skillet on the stove and bring to a bubble. If it’s an oven-proof skillet, you can leave it right in there, but I like little individual pot pies.

Combine and spoon and smooth over the top:
1 cup birchbenders
1 egg
½ cup + 3 Tablespoons chicken stock or water
1 teaspoon garlic powder
– I think Penzey’s roasted garlic powder is the best, but you do you
1 teaspoon poultry seasoning
1 Tablespoon chives
, if you have them
1 pinch of salt
1 pinch or grind of pepper

Pop into a 450 degrees F oven for about 20 minutes, til golden and beautiful.

Optional, but lovely – brush the tops with a little butter to make them shiny.

My little cast iron pans are lodge 5″, but I see that Lodge 6 1/2″ is about 1/4 the price, so you’d be way better off going that route! They’re in my cart, too, so I can fit all the filling into 4! 😀

My favorite cast iron skillet is a 12″ Lodge dual handle pan. Why? The long handles are too heavy to hold with a single hand when they’re loaded up. Since you’re using two hands anyway, you might as well get the ones that take up less space and stack so much better!

My favorite knife. It’s a 7″ full tang Santoku. Full tang just means that the blade runs the full length of the knife. The blade and handle aren’t two separate components, so there’s no breaking point. I chose the Ikon handle design, which is wonderfully ergonomic. I have spent hours on a produce sculpture before and my hand was just as comfy at the end. It’s worth the pennies.

I get asked about my spice wall all the time. The magnetic tins on the wall are great for any spices or salt-free blends. Salt corrodes the tins, so anything with salt is in a glass jar on the counter underneath.
