The State Fair of Texas is cancelled for the year, and our family always has a great time there. There’s tons of fun food, but I always get a roast beef po’ boy with debris gravy. And weird beer. Texas and Louisiana are neighbors, so there’s a lot of sharing. Whenever I make po’ boys at home, I use this recipe. PARASOL’S STYLE ROAST BEEF PO BOY RECIPE from NolaCuisine.com. Great blog! You may look at it and your eyes may get huge in horror when you read about simmering the roast and using Kitchen Bouquet in the gravy, but you just have to trust her. It’s so flippin’ lickable!
Okay, so hopefully I wont offend the author with my completely inauthentic use of her insanely delicious beef. But I’m a tinkerer. I’ve made her po’boys exactly as she commands in the recipe. So yummy! But, I’ve also turned it into a po’boy salad when I was in a more salad-y, less bread-y mood. It was awesome. Tonight, I’m using it in my 800 gram of produce challenge in my roast dinner. 345 grams per plate, which puts me at 1003 for the day. Garlic and Herb Pork Tenderloin is one of my favorite back-pocket recipes. It only takes a few minutes to get it into the oven or grill, and then it cooks really quickly. It’s fabulous for stress-free entertaining or just a regular Monday. It’s really lean meat, lickably delicious, super fragrant, and couldn’t be easier. I got it into the oven post-workout, and let the oven do the work while I showered. Lunch was ready when I was! I made two of them. Twine Swine. It may be the perfect gift. You can hand it to your friend, and in your best Shakespearian theatrical style, loudly proclaim, “The Twine Swine be Thine!” as you thrust your arm skyward. Yeah, I know. That’s a picture from Braveheart, but my attention span wavered a bit looking for just the right Henry V shot. Or you could treat yoself. In that case, it would be more like Montgomery Burns drumming his fingers together and declaring quietly and creepily, “The Twine Swine is mine.” Either way, people will be happy.
Really, I think Twine Swine might have been invented by pigs who were sick of bacon trending, wanting to see people eat more chicken. They might have been inspired by the Chick-fil-a cows. I love roast chicken. Ina Garten makes a perfect roast chicken in Barefoot Contessa Back to Basics: Fabulous Flavor from Simple Ingredients. It’s lickable. Then I got Marcela Valodolid’s Casa Marcela: Recipes and Food Stories of My Life in the Californias. She sticks jalapeños under the skin of the roast chicken and it’s a total game changer. It’s not really spicy, just insanely flavorful. I played with their ideas, and it was like Ina’s chicken and Marcela’s chicken had a delicious, delicious baby.
